The bakery building houses a historic scotch oven which is woodfired and is roughly 120 square feet, and has been restored in 2018 by the current owners. Scotch ovens are traditionally woodfired commercial bakers ovens. A scotch oven has an arched ceiling, a fire box on one side of the main chamber and a flue on the opposite side. The oven's shell comprises massive layer's of brick and sand. The layers are tied together with steel rods so they can contract and expand without pulling apart. Only a few scotch ovens remain, as they posed a threat to the larger flour millers of the time. They were destroyed to eliminate their competition for new supermarket breads. The wood for the oven is locally sourced using a mixture of dry kilned and red gum. Burning timber releases carbon dioxide (a greenhouse gas) but an equal part is absorbed by the trees, making our baking carbon neutral. The current owners have put their heart and soul into this property. For all enquiries on this Property contact Mark Dillow on 0419 882 96
